Pedro Ximinez sherry vinegar with the mother. Slow fermented and unfiltered for maximum flavour.
This vinegar has a luxurious sweet and sour flavour backed up by great depth. It's fabulous to use in sauces and dressings and as an alternative to balsamic.
It's at home on ice cream, spritzed over tomatoes and is amazing to simply dip bread into.
Live vinegar is unpasturised and contains living bacterial cultures.
It was awarded 2* at the 2020 Great Taste Awards. And here are the judges comments:
"This has wonderful rich and sweet raisin and prune aromas on the nose, which speak of the grape it is made from. On the palate, the dried fruit sweetness gives way to an acidity that initially seems quite bold, certainly sharper than the nose suggests, but is quickly moderated by the other flavours, so the acid just lingers with a touch of heat on the finish. A delicious, rich vinegar. We wanted to splash a few drops on some chilled ajo blanco."
"This rare and interesting vinegar has a beautiful amber colour and a deep resonant aroma. The initial shock of the sharp, sour vinegar is tempered by the underlying sweetness which lasts after the sharpness has evaporated. It is an unusual product, which would be wonderful in a dressing for salad with a robust cheese or ham. It is complex, and smooth, with the mellow sweetness ultimately mitigating the sharpness."
"This PX vinegar has a milder than expected aroma but with hints of wood, apples and grapes. The vinegar is bright in the mouth with plenty of fruity acidty and sweetness and some lovely warming rich sherry notes. It stays bright, clean and lively and would clearly be great to use in the kitchen."
